to keep the results so far: this issue seems to be a problem with some email servers which violate RFC 2822 and replace \n by \r\n although we already send \r\n

GMX:
Der Header der E-Mail wurde bereits beim Versand nicht korrekt erstellt.

Laut der Richtlinie für den E-Mail-Versand (RFC 5322 Abschnitt 2.1) wird der Header durch eine Leerzeile vom E-Mail-Body getrennt. In Ihrem Beispiel sind mehrere Leerzeilen im Header des PHP-Mailings welche Teile des Headers in den Body spiegeln. Da hier nicht über unser System gesendet wird, handelt es sich nicht um ein Problem bei GMX.

Auszug aus RFC 5322 2.1 :
A message consists of header fields (collectively called "the header section of the message") followed, optionally, by a body. The header section is a sequence of lines of characters with special syntax as defined in this specification. The body is simply a sequence of characters that follows the header section and is separated from the header section by an empty line (i.e., a line with nothing preceding the CRLF).

Additional information:

I tested it with with http://galaxytool-hosting.eu [^] and my gmx-mail and i recieve the same result as efen does - but if i test it on my local box and the gmx-mail i recieve a clean smooth mail with a working header that gmx can work with - so i guess this could be an issue only on some systems with "special" settings
